Lemon Yogurt Cupcakes
These are quick and easy yet ssoooooo gooood!😋

Me and my sister made these for the first time yesterday.
We both have a sweet tooth and were feeling bored so we
whipped these up in only around 20 minutes. It was ssoo
easy and is great for last minute desserts or cooking with younger kids.
makes: 12 cupcakes
time: 40 min
Ingredients:
Cake
- 1/2 cup of sugar
- grated zest of one lemon
- 1/2 cup of vanilla yogurt
- 3 eggs
- 11/2 cups of flour
- 2 teaspoons of baking powder
- 1/4 teaspoon of salt
- 1/2 cup of olive oil
- Spray oil
- (optional) 12 raspberries
Glaze
- juice of two lemons
- 1/4-1/2 cups of powdered sugar
Recipe:
Cake
- Preheat the oven to 350°F. Oil/line the cupcake pan.
- Mix the sugar and lemon zest in a small bowl, using your finger tips rub them together to distribute the oils.
- In a medium bowl whisk the yogurt and eggs together. Add the zesty sugar and whisk to thoroughly combine. Add flour, baking powder and salt and mix. Add oil and continue mixing until homogeneous.
- Put in cupcake pan. If using raspberries then fill each cup half-way, add a raspberry and top them off. Cook the cupcakes for 20 minutes.
Glaze
- Combine both ingredients until smooth.
- Spoon the glaze over the cupcakes once out of the oven and enjoy.
